Nightingale Ice Cream Sandwiches Launch At Target

The best grocery runs end with snagging a sweet treat to take home, and luckily for Target shoppers, a cult-favorite ice cream sandwich will soon hit the major retailer’s freezer aisles for the first time.

In an exclusive announcement to Food & Wine, Nightingale Ice Cream Sandwiches has revealed that its beloved desserts will be launching in over 370 Target stores across the United States. The handcrafted ice cream sandwiches will be available in five flavors at Target: four established fan favorites and one newer flavor that’s “hard to get your hands on right now,” according to a Nightingale representative.

As a press release from the dessert brand details, “For the first time ever, Target shoppers will find a full shelf dedicated to Nightingale Ice Cream Sandwiches in freezer aisles across key markets, including the Northeast; Denver, Colorado; Dallas, Texas; and more.”

The ice cream sandwiches will be available at Target starting on October 17, and customers can check the Nightingale website to find the nearest store that sells the treats.

The Target partnership marks one of Nightingale’s largest retail rollouts so far. CEO and co-founder Hannah Pollack tells Food & Wine that “This launch feels incredibly special because it represents a new chapter for Nightingale.”

The brand has previously made waves with two noteworthy drops at Costco stores. In July 2024, Nightingale’s Cookie Monster Ice Cream Sandwiches debuted at Costco and sold out within a week, prompting a restock this past summer with an exclusive new flavor, Strawberry Shortcake.

“Our Costco partnership was such an exciting step forward in bringing our sandwiches to a broader audience, but with Target, it’s about being part of people’s everyday lives,” Pollack explains. The CEO wants Target shoppers to know that Nightingale won’t just be a seasonal or one-time offering, confirming that the goal is to make the Target partnership long-term.

The Target launch will kick off with five different flavors: The Classic (Madagascar vanilla bean ice cream and chewy brownie cookies); Cookie Monster (chocolate chip cookies and cookie crumb-infused vanilla ice cream); Strawberry Shortcake (golden brown sugar cookies and strawberry ice cream); Chocolate Blackout (chocolate brownie cookies and chocolate ganache swirl ice cream with chocolate cake pieces); and the recently introduced Brookie Dough.

According to Pollack, “(Brookie Dough) is one of the most special products we’ve ever created: one chocolate brownie cookie, one chocolate chip cookie, and chocolate chip cookie dough ice cream in between.” Target is currently the only national retailer offering four-packs of the Brookie Dough flavor in “chomp-size” — miniature, single-serving Nightingale sandwiches.

Nightingale is a customer favorite thanks to its creative flavors and the texture of its cookieswhich are tender and soft even after being frozen. The co-founder emphasizes that each cookie is baked from scratch, and the ice cream is crafted in small batches using high-quality ingredients and no artificial additions.

“Everything about our process is intentional — we control our overrun, use 14% butterfat ice cream, and every cookie sandwich is built and wrapped with care right in our facility in Richmond, Virginia,” Pollack adds.

Considering how quickly these sandwiches have sold out at Costco stores, we wouldn’t be surprised if they fly off the shelves at Target, too. But don’t worry, Nightingale will be restocking at this retailer, so you won’t miss out on any flavor.
